The double-charring process chars the interior of the bourbon barrels a second time before the whiskey is introduced. The deeper char layer breaks down more wood sugars and creates a thicker layer of caramelized wood compounds that the whiskey extracts during finishing — producing the distinctive butterscotch and vanilla intensity that makes Black Barrel more richly flavored than the Original while retaining the underlying pot still spice that defines the Jameson house style.
