Highland Park is the most northerly whisky distillery on mainland Scotland, situated in Kirkwall on Orkney's main island. The distillery's distinctive character comes from its use of locally sourced Hobbister Moor heather peat — producing an aromatic, floral smoke fundamentally different from the coastal medicinal peat of Islay distilleries — combined with first-fill sherry cask maturation and the maritime influence of Orkney's coastal warehouses.
